Boil the water and add to the couscous. Add spices and a little oil. Stir and cover, leave for 2-4 minutes. Once cooked add coriander

Wash the calamari and stuff with the spiced couscous until full

Preheat the Barbeque to 200 degrees (392F)

With a little oil and seasoning coat the stuffed calamari, place on the hot grill and turn over after 3 minutes, keep turning so as to not burn the calamari

Once the calamari is covered with grill marks on all sides take off the heat and slice up, place on top of the dressed rocket leaf and serve
