Method For Pizza Dough

Start by making the pizza dough. Sieve the flour and salt onto a clean work surface and make a well in the middle.

In a jug, mix the yeast and oil into lukewarm water and leave for a few minutes, then pour into the well.

Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.

Place the ball of dough in a large flour-dusted bowl, and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands.

Divide the dough into as many little balls as you want to make pizzas.
Method for Homemade sauce

In a saucepan over medium heat, add diced tomatoes, roasted garlic cloves and oregano.

Stir until evenly distributed throughout the sauce and fragrant.

Taste and adjust seasonings to your liking.
Method for Pizza
01.
Fire up your Firehawk to 280°C using Pro Smoke lump charcoal. You have a few options for setting things up. You can place your heat deflectors on the middle tier using the Accessory Rack. Then, you place your pizza stone on spacers on top of the heat deflectors. I like creating a higher gap to help promote even cooking on the bottom crust. Another option is to do the above setup on grill grates on the top tier.

To achieve 280°C, open both top and bottom vents until you reach desired temps. Then adjust your settings to stabilise for desired temp.

After the dough has risen, roll dough into a round shape, spread tomato sauce all around, adding Mozzarella cheese and Parmesan Cheese.
04.
At 280°C, the pizza should cook in 9 minutes. Once you see a golden brown crust and melted cheese, remove.
05.
Using the Ziegler and Brown Bake & Roast Pack, place unwrapped ribs in the centre of the rack on the tray over the centre burner, bone side down.
06.
Top off with basil leaves. Slice, serve and enjoy!
Tips
Use a pizza stone to have a crispy crust on the outside and soft on the inside
