Method

Preheat your smoker to 225F/107C.

Trim off the hard fat, leaving a thin layer of fat on top of the butt

Lightly apply oil over the whole butt to help the rub stick. Apply a thick coatin of the BBQ rub

Place the boston butt/pork shoulder on the smoker rack, fat side up
05.
Smoke at 225F/107C for approximately 8 hours or until the pork's internal temperature hits 203F/95C
06.
Remove from smoker and allow to rest for 15 mins. Pull pork apart using forks or tongs

Tips
- Make your own BBQ rub with pantry staple ingredients such as paprika, brown sugar, kosher salt, black pepper etc
- Keep the meat moist by spritzing the pork with apple juice or apple cider vinegar every 45 to an hour
- Serve as a Sunday roast with mashed potatoes and grilled veggies on the side or turn into a pulled pork sandwich
