Tips:
- If you are cooking on a hooded barbeque with 4 or 6 burners, you can replace the flat hotplate with an extra set of grills (available at an additional cost from Barbeques Galore Stores). You can then use 2 x Bar-B-Chef Stones on the grill and cook pizzas for a large family or gathering.
- If you have a back burner, turn it on low and rotate the pizza once during cooking
Method

Combine yeast, salt and sifted flour in large bowl

Gradually stir in water and oil

Turn the dough onto floured surface; knead about 10 minutes or until smooth and elastic

Place dough in large greased bowl, cover; stand in warm place for about 30 minutes with a damp tea towel over the dough and leave until dough has doubled in size

Turn dough onto floured surface, knead until smooth

Divide dough into 2 positions

Mould pizza dough to required size and place on a flat tray floured with cornmeal, ready for your topping

Assemble the pizza with your favourite topping

Place your cold pizza stone in the centre of the BBQ

Pre-heat your gas BBQ for 20-30 minutes with opposite burners on high and low heat under the stone with the hood down. The temperature should be around 200°C to 245°C

Sprinkle stone with flour or cornmeal. Place pizza dough on floured flat plate {paddle} before adding topping. After adding the topping, use quick jerking motion to transport pizza from plate to the hot stone

Adjust the BBQ to med-high and close the hood, bake for 10 to 20 minutes until crust is golden, depending on your BBQ

Use Bar B Chef Spatula to remove pizza when crust is browned and cheese is bubbly, do not remove the stone from the BBQ until cool
